I woke up today to the sound of rain, so not cool in July when it's supposed to be
sunny and warm. So what better way to cheer me up than a warm blueberry pie
with ice cream? so about 8 am I had sugar and eggs mixing and oven warming my
kitchen =)
This pie is very simple to make and the taste is delicious, especially when it's fresh from the oven. It's simple to modify the pie with different berries or even fruits, but be careful not to put too much of them, so the pie stays fluffy.
The recipe:
2 eggs
140g sugar
100g all purpose flour
1 tsp baking powder
1 tsp vanilla extract
70g melted butter
3 tbsp cream
100g blueberries
1. Preheat oven to 200°C/400F.
2. Mix together eggs and sugar until it's pale yellow and thick.
3. Measure all the dry ingredients together and add them to the egg and sugar mixture alternating with cream.
4. Lastly add melted butter and vanilla extract. Pour the dough to the pie pan, add the blueberries on top and bake it for about 25 minutes.
