Chocolate cupcakes with chocolate chips and cream cheese frosting, sounds good right? If you like chocolate you will love these cupcakes. They are rich in chocolate flavour without being too sweet. And with the frosting...yum yum!!
To get the best results use room temperature ingredients.
The recipe makes about 7-8 cupcakes.
Ingredients:
1 egg
90g / 1/2 cup sugar
2 tbsp cocoa powder
100g / 3/4 all purpose flour
1 tsp vanilla extract
1 tsp baking powder
50g / 1/4 cup chocolate chips/ chopped chocolate
1/2 dl / 1/4 cup milk
1/2 dl / 1/4 cup oil
The recipe:
1. Preheat your oven to 220c/400F. Line your muffin pan with paper liners.
2. Mix together the egg and sugar until it's pale yellow and thick.
3. Mix together all the dry ingredients. Chop the chocolate and measure the liquid ingredients together.
4. Add half of the dry ingredients and half of the liquid and mix carefully. Repeat until all is gone.
5. Lastly add the chocolate and fill the liners about 3/4 full and bake about 13-15 minutes.
Cream cheese frosting:
100g /3.5 oz cream cheese (room temperature)
40g melted butter
2 tbsp cocoa powder
230g / 1 cup icing sugar
Measure all the ingredients in a bowl and mix for a few minutes until it's smooth. If the frosting is too liquid add more icing sugar but be careful with the taste.
When the cupcakes are completely cooled, decorate with the frosting.
