quark pie with caramelized peaches




These are the last sunny and warm days or so I was told in the news. That's so not cool, I much prefer the warm and sunny than grey and cold.. But what a perfect time to bake something bright, sweet and fruity :)

The recipe makes one 24 cm/ 9.5 inch pie.

Ingredients:

180g /2 cups graham cracker crumbs

80g / 1/3 cup melted butter
2 eggs
40g / 1/5 cup sugar
1 tsp vanilla extract
200g / 7 oz quark
3-4 peaches
3 tbsp butter
4 tbsp sugar

The recipe:

1. Preheat the oven to 175C/350F.

2. Mix together graham cracker crumbs and melted butter and press onto bottom and sides of your pie pan. Bake for     about 8 minutes. 
3. Make the filling by mixing eggs, sugar, vanilla extract and quark. Pour it into the crust and continue to bake for           15 minutes. 
4. For the caramelized peaches peal and slice the peaches. Heat the butter in a skillet and add the peaches and sugar.     When the sugar starts to caramelize continue cooking 4-5 minutes and stir occasionally. 
5. When the pie is cooled down, add the caramelized peaches and enjoy!

A few tips:


If you haven't made caramel before, be very careful. Caramel is hot, so wear oven mitts and make sure your utensils are able to stand the heat. 

If your sugar gets lumpy, don't worry, just let it melt without stirring. 
The caramelized sugar turns hard very fast once you remove it from heat, so make sure your dessert is nearby. Scrape your pan or skillet right away, before the sugar hardens.
